This is an extremely good way of using up the small unripe tomatoes left on the plants as autumn arrives.
Cut the green tomatoes into very thin slices and sprinkle them with salt. Let them drain for an hour or two. Peel and mince the apples and shallots. Grill the peppers, skin them and cut them into short strips.
Tie the chillies in a piece of fabric. Put all the ingredients except the red peppers and ripe tomatoes in a pan, having just rinsed the tomatoes, and bring to the boil. Simmer fo
