Steamed puddings are direct descendants of the puddings that used to be wrapped in pudding cloths and suspended in the cooking pot. Apples have always been a favourite ingredient, and their combination with blackberries – which are around at the same time of the year – is very traditional. The marriage usually appears in pies, where the fruits are encased in sweet pastry, but here I have steamed a light lemon and cinnamon sponge on top of the fruits.
