Saffron’s rich, orange-coloured strands are the stigmas of Crocus sativus, the saffron crocus. Saffron is the most highly flavoured and expensive spice in the world. While writing this book, the price ranged from £65 to £75 per 25 g (1 oz). This makes it several hundred pounds per 450 g (1 lb).
