  • 2 tablespoons oil
  • 1 onion, finely chopped
  • 1 head celer

Cooking and Serving

Heat the oil in a pot. Add the onion, celery and potato, cover and sweat gently for about 10 minutes, stirring occasionally. Add the tomato purée and sugar. Stir in and then add water. Simmer for 15–20 minutes or till the vegetables are just tender. Put the dulse into a bowl and pour over enough boiling water to just cover. Remove dulse and chop finely. Strain the
