Here is Brother Marcus’s take on the classic Greek pie. Tasos’s mum, Penny, suggests using any leftover greens you have in the fridge, such as lettuce or rocket, in place of or as well as the traditional spinach. Seek out the thicker Greek filo pastry for this pie.

Ingredients

  • 500 g baby spinach
  • 2 tbsp olive oil
  • 200 g

Method

Wilt the spinach in a pan then drain it well. You want to get as much of the water out as possible – a good method is to put the wilted spinach in a clean tea towel and wring it out, but you can also just squeeze it out with your hands.

Heat 2 tablespoons of olive oil in a large saucepan and sauté the onion, spring onion and garlic till soft then set aside to cool for a minute or two. N
