This is a great salad, hot or cold, really set apart by the chilli, basil and cashew nut pesto dressing. Orzo is brilliant in salads (and great in soups too) as it holds its shape and keeps a good texture. Ideally you need a ridged cast-iron grill pan for this, but you can also cook the broccoli and peppers under a very hot grill. A bit of charring really adds to the flavour.
