This is an easy and very adaptable recipe that makes a gorgeous golden, deep pie. You don’t need much else apart from a crisp green salad to go with it. It’s great for picnics too. It’s delicious with a little za’atar or dried thyme in the pastry dough. I made the one in the photo in my cast-iron skillet but you could also use a deep tart tin.
