This is a delicious, light and tangy cake – the satsumas give it an amazingly intense flavour but you could use any citrus fruit. Note that the fruit needs to be simmered for two hours beforehand.

Ingredients

  • 375 g satsumas, clementines or oranges

Method

Preheat the oven to 190°C (170°C fan).

Place the satsumas, clementines or oranges, skin and all, in a large pan of water and bring slowly to the boil. Simmer for 2 hours, covered, turning occasionally so the fruit cooks evenly. Drain and cool.
