An easy-to-make cake: measure the ingredients, mix with a wooden spoon, then bake. The liqueur or brandy is not essential to the recipe but does contribute a lovely flavour to the cake.
In a mixing bowl, stir together the butter, sugar, eggs, essence, flour and ground almonds. When well combined, beat for 1 minute. Cut half the cherries in two, then stir in all the cherries with the flaked almonds. Spoon the mixture into the prepared cake tin and smooth level, sprinkle the extra caster sugar over the top.
