I grew up with these nutritious oat squares. My only change to my mother’s recipe is the addition of orange zest and juice to the date filling.
Prepare the filling first. Roughly chop the dates and soften with the orange juice in a pan over moderate heat until the mixture can be mashed to a purée. Remove from the heat and mix in the orange zest and the cornflour. Set aside to cool while you make the oat crust.
Measure the oats, flour and sugar into a mixing bowl. Add the butter in pieces and rub into the mixture with your finge
