I devised these almond-pastry tarts years ago for an Alice in Wonderland children’s party but a friend who holds bridge parties now serves them.

Ingredients

  • 150 g / 5 oz plain white flour
  • 90 g / 3

Method

Sieve the flour, ground almonds and icing sugar into a mixing bowl. Add the butter and egg yolk with almond essence and mix together with the fingertips to make a soft dough. Shape into a ball, wrap in plastic and chill for 20 minutes.

On a lightly floured board, roll out the dough thinly. Use a heart-shaped cookie cutter to cut out 30 shapes. Place half the shapes on a prepared baking
