An attractive American cake based on a plain sponge cake but decorated prettily for Christmas. A good cake to donate to a fund-raising event.
Cream the butter with the sugar until light and fluffy. Gradually beat in the eggs and the vanilla essence. Fold in the sieved flour very gently. Spoon the mixture into the prepared tin and smooth level. Bake in the preheated oven until a wooden skewer comes out clean from the centre of the cake. Cool the cake in the tin for 4 minutes then turn out on to a wire rack.
