While sweet potatoes aren’t terribly low-carb, the bread in this sandwich is, so what normally would be a splurge becomes a guilt-free, nourishing lunch. Salt in a sandwich might seem superfluous, but don’t skip it; it brings out the flavors of all the ingredients.

Preheat a large cast-iron skillet over medium-high heat.

Using a pizza wheel or kitchen scissors, cut the crust in half, then cut each half in half again to make 4 triangles.
