There are more than fifty thousand Mexican restaurants in the United States, but I don’t know one that serves cauliflower rice in their burritos. This recipe is your grain-free solution.
It’s equally delicious with Green Salsa, and you can swap chicken, beef, or another meat for the pork.
Heat the oil in a large skillet over medium-high heat. Add the bell pepper and onion and cook until crisp-tender, about 5 minutes. Add the garlic and cook for 1 minute, or until aromatic. Add the cumin and chipotle chile and cook for 30 seconds. Add the pork and cook to heat through. Add the salsa and stir to heat through.
