  • 1 cup matzo meal, ground to the consistency of flour

Method

  1. In a bowl, combine the matzo meal, water, and salt and mix by hand to the consistency of masa.
  2. Wet your hands and mold the sopes into 16 small balls. Pat each ball into a 3-inch patty; place on waxed paper.
  3. Heat a comal or large, heavy skillet over medium-high heat until hot. Brush with oil. Add the sopes and cook for 2 minutes on
