Shepherd’s style cooking is said to have originated with Lebanese immigrants to the city of Puebla, many of whom tended flocks. Lamb, a favorite Mediterranean meat, was originally cooked on the spit, but eventually other meat, including pork, was used. Whereas Mexicans traditionally season dishes with chiles, this recipe includes ground black pepper, reflecting another Eastern influence.
