This dish is full of what is good to eat and good for you. All parts of the lime – juice, rind and leaves – are used in the Caribbean for ailments such as colds and flu, and the angostura bitters remind me of bitter aloes. In the past, I’ve tended to use angostura bitters in cakes, but it is also excellent in this savoury dish.

  • Mix all the marinade ingredients together. Pierce the chicken pieces all over with a small, sharp knife. Spread the marinade all over the chicken, tucking it down into the cuts. If you can, cover and leave for a couple of hours in the fridge, turning the chicken over several times.
