As an alternative to the kebab, we have the ‘kickbab’, my Caribbean version of a popular street food. You can add whatever you like to this but my version will always include some melting orange cheese. You can make the loco breads a day in advance and warm them through before stuffing with the chicken.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 × quantity Jerk Rub
  • 1 × quantity Loco

Method

  • Cover the chicken with the jerk rub and leave to marinate in the fridge, covered, ideally for a few hours or overnight.
  • Roll and fold the loco breads, according to the instructions. Preheat the oven to 220°C/425°F/gas mark 7
