Cassava is a root vegetable cultivated in tropical America and in some African countries. The flour is gluten-free and high in protein and vitamin C. Although you can buy cassava flour from most Caribbean markets, it is easy to make at home. Cassava flour has a neutral flavor, like white flour, and the texture of the finished product is as tender as if eggs had been used. This is why cassava is my preferred flour for pancakes, on its own or paired wit
