Lead Pipes

You would think that in our hot, dry climates traditional desserts would be saucy and cold. Some are, but crispy spiced cakes are often the order of the day. These cakes have their origin in the era of British rule and were eaten as a sweet treat at tea time. Eventually they made their way into small village shops and found a place in Caribbean food culture, where they are sometimes consumed with juice instead of tea. The lead pipe is the love child of Italian biscotti and West Indian cocon
