  • 1.5 g agar agar
  • 0.5 g


Combine the sour cream, agar agar and xanthan gum in a small pan and season with lemon juice and salt. Gently heat until the agar powder has melted and then bring to a gentle boil. Pour into 20mm hemispherical silicone moulds and leave somewhere cool to set. Pop the domes out when ready to use.
