Place the cream in a pot and reduce by a third over a medium heat. Add in the Anster cheese and mascarpone, then put in a Thermomix at 70°C for 5 minutes to melt.
Put the cheese mixture in an iSi siphon gun and charge with one N₂O charger. Keep warm in a water bath set to 50°C, shaking regularly.
