In the restaurant, we serve three agnolotti per portion but at home the full recipe will serve 2 to 4.
Cut the rested pasta dough in half and press each piece into a flat disc. Begin feeding the dough through the largest setting on the pasta machine, adding a small amount of 00 pasta flour if necessary to prevent sticking. Fold the dough in half lengthways and feed through the machine again, then repeat, reducing the setting each time until you reach the second finest (1.5 on our machine).
