  • 80 g parsley, leaves picked and chopped
  • 80 g mint, leaves picked a

Method

Blanch the parsley, mint and watercress in boiling water for 30 seconds, then immediately drain and place into some iced water.

Squeeze the herbs dry and blend with garlic and olive oil to make a green herb purée. Add salt to taste.
