  • 80 g pearl onions
  • 60 g reserved lobster knuckle meat (from Lobster Tails), chopped


Gently steam the onions in their skins for 10 minutes until soft. Peel and separate them into individual petals.

Mix the lobster knuckle with the yogurt, dill, chives and lemon zest and juice and season to taste. Stuff each onion petal with about 10g of the lobster mix and place on a tray until ready to plate.
