  • 500 g kohlrabi, peeled and chopped small
  • 6 g agar agar

Method

Place the kohlrabi in a pot and cover with water, then cook on a high heat until it is very soft and has a mash-like texture. Drain off any excess water and transfer the kohlrabi to a Thermomix. Blend until smooth.

Add the purée into a pan with the agar agar and chardonnay vinegar and season with salt and white pepper to taste. Bring everything to a boil for 3 minutes, constantly whiski
