In a bowl, mix the egg yolks, sugar and milk powder together.
Warm the milk, cream, invert sugar and glucose in a pot until steaming. Slowly pour the hot milk onto the egg yolk mix, whisking all the time, then return to the pot and cook out, stirring, until it reaches 80°C. Add sea salt to taste.
