  • 500 g double cream
  • 90 g caster sugar
  • 200

Method

Put the double cream in a large pan with the sugar. Bring slowly to the boil and simmer for 3 minutes. Take it off the heat, add the reduced sea buckthorn juice and whisk well.

Pour into the moulds and freeze overnight — this will allow you to turn them out cleanly.
