Jerusalem artichokes have an earthy, slightly sweet flavour and a texture not dissimilar to potato, so we often use them in similar ways. This is a take on the American twice-baked potato, where you mix the scooped out potato mash with cheese and put it back into the fried potato shell. Weirdly it was never a great seller at Noto, but it should have been and I love it so it’s getting a second chance here.
