My affection for this sweet spicy dish comes from my love of belly pork and crackle. The shallots become meltingly soft, the raisins plump up filed with the sweetness of butter and honey and the infusion of chili gives the dish a real bite that cuts through the decadent fattiness of pork belly. If not for immediate use, remove from the water bath and cool to 38°F (3°C) using the three stage cooling method.
