This is a classic lowcountry cocktail wafer, spicy with red pepper. They will keep for about a week in airtight tins and much longer well wrapped and frozen.

Ingredients

  • 4 tablespoons (½ stick) unsalted butter, softened
  • ½ pound sharp cheddar cheese

Method

Preheat the oven to 350°F. Cream the butter with the cheese, then work in the seasonings and the flour with a large spoon or your hands.

Roll the dough out thin and cut into strips about ½ inch<
