I traveled a lot when I worked for the National Education Association affiliate in South Carolina. At conferences, if our hotel rooms had stove tops or microwaves, someone would always ask, “Are you going to make ‘that’ dip?’ Because it combines Velveeta with Rotel tomatoes and peppers, it was lovingly dubbed “Redneck Rotel Dip.” It was always a big hit.
