Being English I’ve always loved crumpets. They’re sensational toasted and spread with lashings of cold butter, which then slowly melts and drips into the pillowy holes. Honey is my topping of choice but you can eat them with whatever you fancy.

Ingredients

  • 270 ml (9 fl oz) warm full-cream (whole) milk
  • 2 tablespoons warm water</

Method

  1. Pour the warm milk and water into a jug and stir in the sugar and yeast. Leave in a warm place for 10–15 minutes, or until a thick frothy head has formed.
  2. Sieve the flour and salt into a bowl, make a well in the centre and pour in the yeast mixture. Mix the flour into the liquid and then whisk well to form a smooth batter. Cover with a tea towel (dish towel) or
