This is such a cool technique for cooking an omelette and is super easy to whip up. I like to keep this simple and serve it with a few fresh herbs, some fragrant jasmine rice and Thai dipping sauce, which really makes this dish sing.

Method

  1. Break the eggs into a bowl and lightly beat them using a fork. Add the lime juice, rice flour, fish sauce and water. Mix well again, ensuring all lumps have been removed. Add the spring onion and mix to combine.
