Cook your egg just like the fried egg emoji; that is, perfectly just set with no crispy bits or bubbles. I used nutty-flavoured pines and meaty brown mushrooms for this dish as they looked spectacular at the market that day, but use whatever you can find. The anchovies add luxury, the kale adds crunch and the pickled onion adds an acidic bite, all coming together for a real ‘wow’ dish.
