Green mung beans, also known as moong, are hugely versatile and can be used in a salad once they have sprouted or in a dal pre-sprouting, although they do need to be soaked overnight. The following day you need to boil them for 30 minutes to soften them completely. As you can see, this recipe does require some forward planning, but it is worth it. I like to eat the dal with some plain rice and a vegetable curry on the side or sometimes a bowl on its own, as it’s deliciously filling and tast
