Chicken thukpa is a Himalayan soup found in the northern states of India including Sikkim, Darjeeling and Ladakh, as well as neighbouring Tibet, Nepal and Bhutan. It’s a cross between a chicken noodle soup and a ramen and ‘thuk’ means heart, so this is a bowl of heart-warming soup. I often make this when I have leftover chicken from a roast dinner which works well, or you can use breast or boned thighs. I also make my homemade chicken stock with the roast chicken carcass (see
