Himalayan Chicken Thukpa

Chicken thukpa is a Himalayan soup found in the northern states of India including Sikkim, Darjeeling and Ladakh, as well as neighbouring Tibet, Nepal and Bhutan. It’s a cross between a chicken noodle soup and a ramen and ‘thuk’ means heart, so this is a bowl of heart-warming soup.
