A thoran is a dry vegetable curry, commonly found in the state of Kerala. There is a very similar dish in Tamil Nadu, known as poriyal. Both dishes combine vegetables with coconut. Fresh is best, but desiccated also works well, for convenience. It is a straightforward dish and easy to prepare when you are in a hurry. It also works well alongside more gravy-led curries, creating a balanced meal.
