This charming name describes a classic Shantou-style dish consisting of braised pork in soy sauce. Rice is the usual accompaniment, although the northern Chinese have a version that is served with steamed breads. The dark soy sauce specified here is a very thick variety, usually available in Chinese stores. It has a sweet edge to it that serves the dish well.
