Shrimp Toast makes an irresistible finger-food appetizer to accompany cocktails and to serve as part of a buffet, or as an East-meets-West sandwich lunch. It is made from leftover bread that has dried out, or fresh bread sliced and dried in the oven, so it won’t absorb the oil. It is also excellent made with fish paste, which has its own unique texture and taste and can be made at less cost.
