Shrimp Toast makes an irresistible finger-food appetizer to accompany cocktails and to serve as part of a buffet, or as an East-meets-West sandwich lunch. It is made from leftover bread that has dried out, or fresh bread sliced and dried in the oven, so it won’t absorb the oil. It is also excellent made with fish paste, which has its own unique texture and taste and can be made at less cost.

Ingredients

  • 1 recipe Basic Shrimp Paste
  • 10 slices stale white bread (use 2-day-old bread, or dry fresh bread in the oven with the pilot light on)
  • 4 cups peanut oil for deep-frying

Method

Deep-frying

  1. Prepare the shrimp paste. Cut the bread slices in half, into triangles or rectangles. Spread them with shrimp paste.

  2. Mound the paste so that it is thickest in the middle.

  3. Deep-fry the shrimp-spread bread slices in the hot oil (375 degrees) to brown them.

  4. Serve them while they are hot and crisp.

  • Suggested Beverage: Dry Chenin Blanc or Macon Blanc
