This richest of fruit puddings needs no introduction. We have given two traditional methods—boiling and steaming—and both are easy to make in advance and can be reheated easily on Christmas day.
To make the marinated fruits, place all the ingredients into a large bowl and mix together well. Cover with plastic wrap and leave overnight in a cool place.
The next day, prepare the pudding by placing all the ingredients in a bowl and making a well in the centre. Add the marinated fruits and mix to form a soft batter.
