Mackerel With Horse-Radish Sauce



The mackerel are either grilled or boiled, served with plain boiled potatoes and the following sauce accompanies them: Melt 1 tablespoon of butter in a saucepan, add gradually a little less than a tablespoon of flour, and work till smooth. Add ½ pint of warm sour cream gradually, stirring well, then add 2 tablespoons of finely grated horse-radish 1 or 2 teaspoons of vinegar and a little salt. Stir well and simmer for 5 minutes.
