Raita is well-seasoned yogurt sauce and serves as a balance to the myriad spicy flavors of many Indian meals. Traditional raita originates from northern India. Much like the lassi, another yogurt-based favorite, raitas come in an assortment of flavors. Here is a basic recipe with four different variations.

Ingredients

  • cups plain yogurt
  • 1 teaspoon salt
  • 1 teaspoon

Method

  1. Combine all the ingredients in a mixing bowl.
  2. Stir in your choice of vegetables.
