Milagu Podi, which literally translates to “pepper powder,” is an innovation from the South Indian kitchen. These podis are an essential shelf stable, and are an excellent accent to typical meals of rice and lentils served with the obligatory dollop of ghee, or enjoyed over freshly steamed idlis. I often spoon this over dosas, especially with some melted cheese.
