Basically these sauces are glorious fakes — they look, taste, and act like sauces but they are simply under-whipped cream with flavorings. They are easier and faster than crème anglaise. Serve one of these with Chocolate Marquise. They are also good with the chocolate tortes in Chapter 4, when you don’t feel like finishing them with chocolate glaze! Everyone should know how to cheat….
