This is one of my favourite speedy light meals or anytime snack. I like it best when made with organic white sourdough bread and whatever ‘wild’ mushrooms I can buy, but it’s also delicious made with regular mushrooms, especially when they’re fried in vegan butter (Homemade, or store-bought). So simple, so good.
