A lovely, quick treat for one that you can rustle up in a few minutes in a cup or a mug. Thanks to my daughter Meg for this recipe, which has often been enjoyed by my twin teenage grandsons.

Ingredients

  • ½ tsp cider vinegar
  • 50 ml (2 fl oz/

Method

Combine the cider vinegar and soya milk in a bowl and set aside to curdle.

In a separate bowl, mix the sugar and vegan butter or spread until well combined. Add the flour, cocoa, baking powder and vanilla extract and mix thoroughly. Pour in the curdled milk and mix until well combined.
