You can make dampers with any bread dough or scone mixture, though this simple blend of flour and water works well enough. If you enrich the dough with a slurp of olive oil or an egg, you’ll need less water. Child’s play, really.

Ingredients

  • 500 g strong bread flour
  • 1 tbsp baking powder
  • 1 tsp

Method

Peel the bark off several small wooden sticks, or soak several wooden skewers in water for about 30 minutes.

Mix the flour with the baking powder and salt in a bowl, or tip into a heap on a table. Make a well in the middle with your fist and add the water or milk, in a steady stream, drawing the dry ingredients into the wet with your hand till you have a soft pliable dough.
