Making wreath bread – spiced buns baked in the shape of a wreath – is a habit acquired when my own children were small and we spent several Christmases in Provence, where fruit-speckled ring breads, symbols of unity as well as the Christ child’s halo, are on sale in bakeries throughout the festive season.

  • 1 kg strong white bread flour
  • 1 tsp ground cinnamon
  • ½ tsp</

Method

Bring all the ingredients and the mixing bowl up to room temperature before you begin. Yeast likes warmth and can’t work without it.

Sift the flour and spices into the mixing bowl and toss with the dried fruit and nuts. If using fresh yeast, mix it with a little warm water and a pinch of sugar to start it working quickly. If using dried yeast, mix it straight into the flour, or follow t
