  • 3 large garlic cloves
  • 1 cup packed fresh parsley leaves
  • 2 to 3 tablespoons grated lemon zest
  • ½ teaspoon or so salt


In a Mini food processor, pulse the garlic to coarsely chop. Add the parsley and lemon zest and pulse a few more times to finely chop it all. Be careful not to turn it into a paste; it should be loose and airy. Alternatively, you can chop it all together by hand, which is ultimately more fulfilling. Add salt to taste.
